Venezuela is a country located in the Southern Cone of the American continent with a coast and archipelagos in the Atlantic Caribbean. Its capital is Caracas. It borders Colombia, Brazil and Guyana. It is known for its great environmental diversity, as well as its oil. It has a very high biodiversity and occupies the seventh place in the world list of nations with the greatest number of species. There are habitats that range from the Andes mountains in the west, to the tropical forest of the Amazon basin in the south, through the extensive plains of the Llanos, the Caribbean coast and the Orinoco River delta in the east.
Along its Caribbean coast, there are tropical tourist islands, including Margarita Island and the Los Roques archipelago. To the northwest is the Andes mountain range and the colonial city of Mérida, a base for visiting the Sierra Nevada National Park.
Poet: Jesús L. García
Jesús L. García (Río Caribe, Sucre state, 1995) is a poet and member of the poetic collective La Metáfora Marginada, who was created on the streets of Bogotá, a city to which he migrated in 2018. Since then, he has been writing “poems for alms” with a typewriter on the streets; he has brought this vital poetry to Guayaquil and Caracas.

This poem has to become a river, to roll over the page, until it soaks it with a nostalgia that picks up long threads of history, like an old woman to her rags. Be a river that gently visits an old house where a woman scares the chickens. She has a long skirt, like a sadness for being a woman and her hands stained by the old gray hairs of her skin. Silent wrinkles, those white spots on her cocoa flesh. Wrinkled cocoa hands that have lost a few fingers from counting so much what they would do with the pension that never came. She goes, with her Indian feet, with her Indian face, with her Indian mouth, where she left a grimace that tried to be a smile, but could only get there; to a forked grimace that at least served to hold the tobacco. She goes, with a punch bowl of clothes and a gourd to bathe in the river and wash away her sadness.
The river is made of the same liquid membrane of memory, of the same national memory. The river comes from footprints that brought the woman here, it flows from where the morocotas were not ghosts and mysteries buried yet, but vain coins of exchange. From further back, when this land belonged to no one and was only populated by spirits, who stayed here forever; to witness the destiny of a story that began just a while ago and was born so old.
Now the same ghosts, the same mysteries bathe with the woman in the river. They wash her head. They heal her tired feet. Now she can listen to the lonely soul in the ceremonial temple of the river and witness the coming of a goblin who playfully hides among the cocoa bushes.
And something the woman says while she rubs a sheet hollowed out with quebrada flowers, something she says of a field so lonely and forgotten by God. Where cocoa stained the hands, but it was of no use because oil appeared and the cities suddenly became big and it even seems that progress is a party. But it also says something about a hammock to rock the hours, and it also says something about the drunken breath of a galleon. Her eyes, which are always sad, know something and the cigar-maker’s fork must know something in her smile, because they look far away and say nothing.
Meanwhile, the rum of the starry eastern sky kisses her lips, of an old woman. Her lips; sweet as a majarete. Some runaway slave through those eastern hills had to steal an Indian woman once. Some runaway black man once had to make love on a river stone with an Indian woman, who carried cocoa on her skin, so that she could be born; the old woman, the old woman who now washes, as if redeeming history, her husband’s shirt from working the land and remembers that her country is like a bird that flies lit on fire and passes singing through those eastern hills, omens of the future that awaits her.
Recipe: Chocolate Quesillo
- 5 Egg yolks
- 1 cup condensed milk or you can use 1 can.
- 1 cup dark chocolate for baking with a minimum of 55% cocoa.
- 10 tablespoons of sugar for the caramel.
Preparation:
- In a mold 18 centimeters in diameter, place the sugar with a little water and put it on the fire to make the caramel. Melt the sugar until it turns a dark color. When the caramel is ready, remove it from the heat and tilt it so that it runs down the sides of the mold, tilting it carefully so as not to burn yourself and turning it. Then set it aside while it cools.
- In a small pot, melt the chocolate in the milk. Then, in a container, add the yolks, condensed milk, milk and chocolate and stir until all the ingredients are well mixed.
- Once the caramel has cooled, pour the mixture into the mould and cook it in a bain-marie in the oven, preheated to 180°, for one hour or until a toothpick inserted comes out clean.
- When the quesillo is ready, let it cool, cover it and leave it in the fridge overnight.
- To remove it from the mould, use a thin knife to loosen the edges of the quesillo from the walls of the mould and turn it over onto a plate that is a little deep to prevent the caramel from spilling out.
- Serve with slices of strawberries.
Venezuela
Venezuela es un país ubicado en el Cono Sur del continente americano con costa y archipiélagos en el Caribe Atlántico, su capital es Caracas. Colinda con Colombia, Brasil y la Guyana. Es conocido por su gran riqueza ambiental, así como su petróleo. Tiene una biodiversidad muy alta y ocupa el séptimo lugar en la lista mundial de naciones con mayor cantidad de especies. Existen hábitats que van desde las montañas de los Andes en occidente hasta la selva tropical de la cuenca del Amazonas en el sur, a través de las extensas planicies de los Llanos, la costa del Caribe y el delta del río Orinoco en el oriente.
A lo largo de su costa en el Caribe, hay islas turísticas tropicales, entre ellas la Isla de Margarita y el archipiélago Los Roques. Al noroeste está la cordillera de los Andes y la ciudad colonial de Mérida, una base para visitar el Parque Nacional de la Sierra Nevada.

Este poema tiene que hacerse río, echarse a rodar sobre la hoja, hasta empaparla de una nostalgia que va recogiendo hilos largos de la historia, como una vieja a sus harapos. Ser un río que visita suave una casa vieja donde una mujer espanta las gallinas. Tiene la falda larga, como una tristeza por ser mujer y las manos manchadas por las viejas canas de la piel. Arrugas silenciosas esas manchas blancas sobre su carne de cacao. Arrugadas manos de cacao que han perdido unos dedos de tanto contar lo que harían con la pensión que nunca llegó. Ella va, con sus pies indios, con su cara india, con su boca india, donde dejó una mueca que intentó ser una sonrisa, pero sólo pudo llegar hasta ahí; hasta una mueca de horqueta que al menos sirvió para sostener el tabaco. Va, con una ponchera de ropas y con una totuma a bañarse en el río y a lavar sus tristezas.
El río está hecho de la misma membrana líquida de la memoria, de una misma memoria nacional. El río viene de unas huellas que trajeron a la mujer hasta aquí, se escurre desde donde las morocotas no eran fantasmas y misterios enterrados todavía, sino vanas monedas de cambio. Desde más atrás, cuando esta tierra no era de nadie y sólo la poblaban espíritus, que para siempre aquí se quedaron; a presenciar el destino de una historia que empezó hace nada y que nació tan vieja.
Ahora los mismos fantasmas, los mismos misterios se bañan con la mujer en el río. Lavan su cabeza. Curan sus pies cansados. Ahora puede escuchar al ánima sola en el templo ceremonial del río y presenciar la venida de un duende que juguetón se oculta, entre las matas de cacao.
Y algo dice la mujer mientras restriega una sábana ahuecada de flores de quebrada, algo dice de un campo tan solo y olvidado por Dios. Donde el cacao manchó las manos, pero no sirvió de nada porque apareció el petróleo y las ciudades se hicieron grandes de repente y hasta parece que el progreso es una fiesta. Pero algo dice también de un chinchorro para mecer las horas, y algo dice también del aliento borracho de un galerón. Algo saben sus ojos que siempre están tristes y algo tiene que conocer la horqueta de tabaquero en su sonrisa, porque miran lejos y no dicen nada.
Mientras tanto, el ron del cielo estrellado oriental besa sus labios, de anciana antigua. Sus labios; dulce de majarete. Algún esclavo fugitivo por aquellos cerros orientales se tuvo que robar una india alguna vez. Algún negro fugitivo alguna vez tuvo que hacer el amor sobre una piedra de río con una india, que llevaba el cacao en la piel, para que naciera ella; la mujer anciana, la anciana antigua que ahora lava, como redimiendo la historia, la camisa de trabajar la tierra de su marido y se acuerda que su país, se parece a un pájaro que vuela prendido en candela y pasa cantando por aquellos cerros orientales presagios del futuro que le espera.
Receta Quesillo de chocolate
Ingredientes:
- 5 Yemas de huevo
- 1 taza leche condensada (1 lata)
- 1 taza de chocolate negro de 55% de cacao
- 10 cucharadas de Azúcar para el caramelo
Elaboración:
- En un molde de 18 centímetros de diámetro colocamos el azúcar con un poco de agua y ponemos en el fuego para hacer el caramelo, que debe quedar de un tono oscuro. Cuando el caramelo está listo, retiramos del fuego y lo inclinamos para que se corra en las paredes del molde inclinándolo con cuidado de no quemarse y girándolo. Luego se deja a un lado mientras se enfría.
- En una olla pequeña derretimos el chocolate en la leche. Luego en un recipiente echamos las yemas, la leche condensada, la leche con el chocolate y removemos hasta que todos los ingredientes estén bien mezclados. Una vez el caramelo se ha enfriado, vertemos la mezcla en el molde y lo ponemos a cocinar en baño de maría en el horno previamente precalentado a una temperatura de 180°, durante una hora o hasta que al introducir un palillo, éste salga limpio.
- Cuando el quesillo está listo se deja enfriar, lo tapamos y dejamos en la nevera de un día para otro.
- Para desmoldarlo, con la ayuda de un cuchillo delgado despegamos los bordes del quesillo de las paredes del molde y le damos la vuelta sobre un plato que sea un poco hondo para evitar que el caramelo se derrame.
Se puede servir con unas rebanadas de fresas.
