Belice cuenta con bellezas de la naturaleza excepcionales como es el Great Blue Hole, o bien, el Gran Agujero Azul, a menos de 100 kilómetros de la Ciudad de Belice. 

Pero no sólo se encuentra esta maravilla de arrecife, sino también, las ruinas arqueológicas Xunantunich de la antigua cultura maya, a unos 130 kilómetros de la Ciudad de Belice. Así como las grutas de Actun Tunichil Muknal, donde se han encontrado piezas de cerámica, huesos; en las inmediaciones de este sitio se encuentran ríos y cascadas. 

Belice es un país centroamericano que puede pasar desapercibido; su cultura multi-étnico que implica una historia excitante en la cual personas de todas partes encontraron y continúan encontrando paz y tranquilidad en este refugio de la democracia. La población de Belice es la unión entre los pueblos maya, africanos, garifunas, arawak del caribe, europeos. Su lengua oficial es el inglés, sin embargo, más del 40% de la población habla otros idiomas como el criollo beliceño (Kriol), el español y el maya.

La lengua kriol, una lengua de intercomunicación entre los europeos y los africanos que se creó del inglés y varios idiomas africanos, ha llegado a considerarse un símbolo de orgullo de la cultura beliceña.

George Cadle Price: padre de la patria 

Nació en la Ciudad de Belice, 1919, sus padres, Irene Cecilia Escalante y William Cadle Price. George Cadle Price falleció el lunes 19 de septiembre de 2011 en Ciudad de Belice, dos días antes de celebrar el trigésimo aniversario de la independencia de su país, siendo precisamente él, quien impulsó y le dio forma a través de múltiples gestiones diplomáticas que culminaron el día 21 de septiembre de 1981. Su gran talento humano lo llevó a sostener incontables pláticas con los más altos gobernantes de Inglaterra, incluso con la reina Isabel II, el trámite de independencia le costó 37 años, teniendo como fruto la soberanía con la que ahora cuentan beliceños, aunado a su escudo, bandera e himno nacional. 

Entregó su vida al amor por su patria y por su pueblo, viviendo de una manera austera y sencilla. Su impulso no radicaba en el populismo, ni en su gran capacidad de oratoria o carisma, sino a su tenacidad, perseverancia y persistencia. 

Realizó sus estudios en los centros de formación Jesuita, lo que le ayudó a tener especial interés por la sociedad en su completo; visitaba los hogares de la gente sencilla para saber cuáles eran sus costumbres, necesidades y dictaminar leyes que beneficiaran a la mayoría.

En su función como estadista, Price logró la armonía entre las diversas regiones de su país, el norte mestizo, con el centro criollo (que creó su lengua propia: el kriol), así como con el sur negro (que habla el garífuna, la mayor lengua africana americana), el interior maya y a numerosos inmigrantes que siguen hablando lenguas de China, India o Alemania.

Receta: Sopa de pollo en leche de coco

Ingredientes:

  • 1 pollo entero cortado en piezas pequeñas, deshebrado. 
  • 2 cucharadas de salsa del pescado merluza, hecho al horno con limón y aceite de oliva: 2 cucharadas
  • 1 cucharada de azúcar blanca
  • 2 tazas de pimientos morrones o ajíes colorados o verdes picados en cubos
  • 1 taza de caldo de pollo
  • ½ taza de jengibre fresco cortado en rodajas delgadas
  • 2 tazas de leche de coco
  • Cilantro al gusto

Preparación:

Se coloca en una olla, a fuego lento, el caldo de pollo, junto con la salsa de pescado, el jengibre y la leche de coco.

Unos 20 minutos más tarde, se agregan el pollo, el azúcar y los pimientos en cubos, y se deja en la olla 15 minutos.

Finalmente se sirve el caldo en platos hondos pequeños y se decoran con un poco de cilantro.

Belize

Belize has exceptional natural beauties such as the Great Blue Hole, less than 100 kilometers from Belize City.

But not only is there this reef wonder, but also the Xunantunich archaeological ruins of the ancient Mayan culture, about 130 kilometers from Belize City. As well as the Actun Tunichil Muknal caves, where pieces of pottery and bones have been found; in the vicinity of this site there are rivers and waterfalls.

Belize is a Central American country that can go unnoticed; its multi-ethnic culture implies an exciting history in which people from all over found and continue to find peace and tranquility in this refuge of democracy. The population of Belize is the union between the Mayan, African, Garifuna, Arawak peoples of the Caribbean, and Europeans. Its official language is English, however, more than 40% of the population speak other languages ​​such as Belizean Creole (Kriol), Spanish and Mayan.

The Kriol language, a language of intercommunication between Europeans and Africans that was created from English and various African languages, has come to be considered a symbol of pride in Belizean culture.

George Cadle Price

He was born in Belize City in 1919 son of Irene Cecilia Escalante and William Cadle Price. George Cadle Price passed away on Monday, September 19, 2011 in Belize City, two days before celebrating the thirtieth anniversary of his country’s independence. He was the one who promoted and shaped it through multiple diplomatic efforts that culminated on September 21, 1981. His great human talent led him to hold countless talks with the highest rulers of England, including Queen Elizabeth II. The process of independence took him 37 years, resulting in the sovereignty that Belizeans now have, along with their coat of arms, flag and national anthem.

He dedicated his life to the love of his country and his people, living in an austere and simple way. His drive was not based on populism, or on his great oratory skills or charisma, but on his tenacity, perseverance and persistence.

He studied at Jesuit training centers, which helped him to have a special interest in society as a whole; he visited the homes of ordinary people to find out what their customs and needs were and to dictate laws that would benefit the majority.

In his role as a statesman, Price achieved harmony between the various regions of his country, the mestizo north, with the Creole center (which created its own language: Kriol), as well as with the black south (which speaks Garifuna, the main African American language), the Mayan interior and numerous immigrants who continue to speak languages ​​from China, India or Germany.

Ingredients:

  • 2 tablespoons of hake fish sauce, baked with lemon and olive oil: 2 tablespoons
  • 1 tablespoon of white sugar
  • 2 cups of bell peppers or red or green chili peppers chopped into cubes
  • 1 cup of chicken broth
  • ½ cup of fresh ginger cut into thin slices
  • 2 cups of coconut milk
  • Cilantro to taste

Preparation:

Place the chicken broth in a pot over low heat, along with the fish sauce, ginger and coconut milk.

About 20 minutes later, add the chicken, sugar and diced peppers, and leave in the pot for 15 minutes.

Finally, serve the broth in small deep plates and decorate with a little cilantro.
