Guyana travel guide: Discover waterfalls, rainforest adventures, rich culture, and the history behind South America's hidden gem

The Co-operative Republic of Guyana is one of the smallest countries on the mainland of South America. It offers a variety of tourist attractions, including not only its coastline, which seems straight out of a dream, but also its rivers and waterfalls. The name Guyana comes from an Arawak root word meaning “land of many waters.”

Guyana is located between the Orinoco River and the Amazon River, allowing it to share in the natural wealth of the Amazon rainforest region. Because it lies within the equatorial zone, the country is characterized by tropical rainforests and humid forests.

Guyana holds a strategic position in the continental Caribbean region, as it borders both Brazil and Venezuela. The territory was colonized by the British and, although it fought for independence from the United Kingdom, it maintains a unique relationship with its former colonial power, remaining a member of the Commonwealth of Nations since achieving independence in 1966.

The Indigenous peoples officially recognized by the government include the Makushi, Wapishana, Lokono (Arawak), Akawaio, Patamona, Wai Wai, Arekuna, and Warrau.

Visitors to Guyana often take the opportunity to experience a rich culinary tradition that brings together influences from three continents: the Americas, Africa, and Europe.

Among the country’s most notable attractions are Kaieteur Falls, the Iwokrama Forest, the Rupununi region with its vast savannas and remarkable biodiversity, and the splendid and picturesque capital city of Georgetown.

Pepperpot

Ingredients

  • 1 pound of oxtail
  • 2 pounds of beef for shredding
  • 1 pound of beef bones for broth
  • 1 pound of goat meat (optional)
  • Guyanese Wiri Wiri peppers

For the Marinade

  • 3 cups cassareep
  • 2 tbsp brown sugar
  • ½ onion
  • 3 garlic cloves
  • 1 tbsp fresh thyme
  • 1 pinch white pepper
  • 1 tsp cayenne pepper
  • Guyanese Wiri Wiri peppers

For the Stew

  • 1/3 onion, diced
  • 3 garlic cloves
  • Oil
  • 3 medium cinnamon sticks
  • 1 pinch ground cloves
  • Guyanese Wiri Wiri peppers
  • Salt to taste

Instructions

  1. Prepare the marinade by blending all the marinade ingredients into a thick, smooth paste. The mixture should be homogeneous and fairly dry so that the flavors remain concentrated.
  2. Coat the meat and beef bones completely with the marinade. Make sure all the meat is thoroughly covered. Let it marinate for at least 40 minutes before cooking.
  3. To start the stew, sauté the diced onion and garlic in oil over high heat. Add the marinated meat and sear it well. Then add the cinnamon sticks, a pinch of ground cloves, and the chopped Wiri Wiri peppers. Pour in 2 cups of water, reduce the heat, and simmer for about 2 hours.
  4. Serve garnished with fresh herbs to brighten the flavor. It can be accompanied by steamed white rice.

La República cooperativa Guyana es uno de los países más pequeños de la parte continental del cono sur del continente americano. Cuenta con varios sitios turísticos, no sólo sus costas que pueden parecer simplemente sacadas de los sueños, sino también sus ríos y cascadas. El nombre Guyana tiene su origen en la raíz de las lenguas Arawak que significa “tierra de muchas aguas”.

Se encuentra entre el Río Orinoco y el Río Amazonas, lo que le permite compartir las riquezas naturales de la región selvática de la Amazonia. Debido a que forma parte de la región ecuatorial cuenta con bosque húmedos y selvas.

La Guyana tiene un lugar estratégico en la región del caribe continental, pues colinda con Brasil y Venezuela. El territorio fue colonizado por los británicos y a pesar de haber luchado por su independencia del reino unido, alcanzó un estatus intermedio, pues aún forma parte de la mancomunidad de naciones británicas desde 1966.

Los pueblos indígenas reconocidos por el gobierno de su país son los makushi, wapishana, los lokono (arawak), akawaino, patamona, wai wai, arekuna y warrau. 

Es común aprovechar la visita a la Guyana para disfrutar y conocer una cultura rica en gastronomía que uno los tres continentes: América, África y Esuropa. 

Las visitas para conocer las Cataratas de Kaieteur, el bosque de Iwokrama, la región de extensas sabanas y gran biodiversidad de Rupuni, así como la esplendorosa y pintoresca ciudad capital de Georgetown. 

Pepperpot

Ingredientes:

  • 1 libra de carne de cola de res
  • 2 libras de carne de res para deshebrar 
  • 1 libra de Huesos de res para caldo
  • 1 libra Carne de cabra (opcional)
  • Chile Wiri Wiri Guyano

Adobo:

  • 3 tazas de Caldo de casaba
  • 2 cdas Azúcar morena
  • ½ Cebolla
  • 3 Ajos
  • 1 cucharada de Tomillo fresco
  • 1 pizca de Pimienta Blanca
  • 1 cdita de Pimienta de cayena
  • Chile Wiri Wiri guyano

Para el guiso

  • 1/3 de cebolla en cuadritos 
  • 3 ajos
  • Aceite
  • 3 rajas de canela medianas
  • 1 pizca de clavo en polvo
  • Chile Wiri Wiri Guyano
  • Sal al gusto

Preparación

  1. Se elabora el adobo mezclando todos los ingredientes del adobo hasta que queden como pasta, la mezcla debe ser homogénea y espesa, casi reseca para que los sabores se concentren.
  2. Posteriormente se pone a marinar la carne junto con los huesos en el adobo, en la carne, debe quedar la carne completamente cubierta en adobo. Se deja marinar por al menos 40 minutos antes de llevar a cocción. 
  3. Para iniciar el guiso, es necesario saltear la cebolla y el ajo picados a fuego alto, luego agregar la carne marinada a que se selle, la canela y 1 pizca de clavo en polvo, el chile Wiri Wiri picado y posteriormente agregar 2 tazas de agua para poner a cocer a fuego lento por 2 horas. 
  4. Se puede servir en un plato con un poco de hierbas frescas para refrescar el sabor, así como acompañarlo de arroz blanco.
